Easy Crock Pot Pork Roast With Stuffing
A spiced pork loin, cooked with a flavorful dressing in a slow cooker, can be quickly prepared using a frozen mirepoix mixture.

Grease a 5-6 quart slow cooker.

Sauté onion, celery, and carrots in butter until softened, then combine with stuffing mix in a large bowl.

Add parsley, chicken broth, 1/2 teaspoon salt, and dried cranberries to the stuffing mixture; mix well.

Spoon the prepared stuffing into the slow cooker.

Rub the pork roast with combined rub ingredients, then place it on top of the stuffing.

Cover and cook on low for 7-9 hours, or until the pork is cooked through.
