Heat olive oil in a skillet over medium heat, then brown pork chops seasoned with pepper for 5 to 7 minutes total, turning once.

Transfer the browned chops to a slow cooker.

Combine soup mix, broth, and water in a bowl, then pour this mixture over the chops.

Cover and cook on low for 6 to 7 hours, or on high for 3 to 3 1/2 hours.

Remove pork chops to a serving plate and keep them warm.

Strain the slow cooker juices, skim off fat, and transfer to a saucepan.
