Easy Creamy Spinach Soup

In a large saucepan, heat 2 teaspoons olive oil and sauté the cubed potato, chopped onion, chopped celery, and minced garlic for 5 minutes.

Add 2 cups broth and 2 cups fat-free milk; bring the mixture to a boil, then cover and simmer for 10 minutes.

Stir in 3 ounces of spinach, cover, and continue to simmer for another 10 minutes.

Allow the soup to cool slightly, then blend it with the remaining 3 ounces of spinach until smooth, using either a blender or an immersion blender.

Adjust seasoning to taste and serve.
