Easy Creamy Salmon Bisque

Instructions

  1. Melt butter in a medium saucepan, then sauté grated onion for 4-5 minutes until tender.

  2. Stir flour into the onion mixture and cook for 2 minutes, stirring continuously. Add bay leaf and gradually stir in broth; cook until thickened and smooth.

  3. Incorporate wine and simmer on low heat for 10 minutes, then remove the bay leaf.

  4. Stir in tomato paste and salmon with its juices. Puree the bisque until smooth using a blender or hand blender, then return to the saucepan if using a standard blender.

  5. Blend in half-and-half and season the bisque with salt and pepper to taste.

  6. Garnish as desired with roasted red pepper strips, croutons, sour cream, or fresh parsley before serving.
