Instructions

  1. Start boiling 2 inches of salted water in a large saucepan.

  2. Break cauliflower into bite-sized florets.

  3. Place florets in a steamer basket over boiling water, cover, and steam for 4 to 5 minutes until tender.

  4. Drain cauliflower and transfer to a serving bowl.

  5. Melt butter in a small saucepan over medium-low heat.

  6. Whisk flour into melted butter until smooth, then cook for 2 minutes, stirring constantly.

  7. Gradually add milk, continuing to cook and stir until the sauce is smooth and thickened.

  8. Season sauce with salt, pepper, and optional cayenne or nutmeg, then pour over hot cauliflower and mix to coat.
