Easy Coronation Chicken Recipe

Instructions

  1. Heat oil in a skillet, then cook chopped onion until translucent, about 3-4 minutes.

  2. Stir in curry paste and cook for 2 minutes until fragrant, then add tomato paste and cook for 1 minute.

  3. Remove from heat, then stir in red wine, chicken stock, bay leaf, salt, and pepper.

  4. Return to heat, bring the mixture to a boil, then reduce heat to low.

  5. Stir in sugar and lemon juice, and simmer for 5-10 minutes.

  6. Strain the curry sauce into a bowl, discard solids, and let cool.

  7. Gradually combine the cooled curry sauce with mayonnaise.

  8. Stir in apricot jam, then fold in cream.

  9. Toss cooked chicken with sufficient sauce to coat; adjust seasoning as needed.

  10. Garnish with toasted sliced almonds and serve.
