Easy Coronation Chicken Recipe
Coronation chicken is a historical dish featuring cooked poultry enveloped in a rich, fruity curry sauce, ideal for utilizing leftover chicken.

Heat oil in a skillet, then cook chopped onion until translucent, about 3-4 minutes.

Stir in curry paste and cook for 2 minutes until fragrant, then add tomato paste and cook for 1 minute.

Remove from heat, then stir in red wine, chicken stock, bay leaf, salt, and pepper.

Return to heat, bring the mixture to a boil, then reduce heat to low.

Stir in sugar and lemon juice, and simmer for 5-10 minutes.

Strain the curry sauce into a bowl, discard solids, and let cool.

Gradually combine the cooled curry sauce with mayonnaise.
