Easy Cornmeal Fried Shrimp

Instructions

  1. Preheat the oven to 200 F and prepare a baking sheet with a rack and paper towels.

  2. Peel shrimp, leaving tails on, rinse under cold water, and pat dry.

  3. Heat about 3 inches of vegetable oil to 360 F in a deep saucepan or fryer.

  4. Whisk milk and egg in a medium bowl, then add the shrimp and let stand for 3 to 4 minutes.

  5. In another bowl, combine flour, cornmeal, baking powder, salt, and a dash of black pepper.

  6. Dip the shrimp into the dry mixture to coat thoroughly, shaking off excess.

  7. Fry coated shrimp in small batches for 2 to 3 minutes until golden brown, then drain on paper towels and transfer to the warm oven.

  8. Sprinkle the fried shrimp with salt and pepper to taste.
