Instructions

  1. Preheat oven to 400°F and prepare a 9x9-inch baking dish with cooking spray or butter and flour.

  2. In a large bowl, sift together flour, cornmeal, baking powder, and salt.

  3. In a separate bowl, combine half and half, eggs, melted butter, and optional honey and sugar.

  4. Add the liquid mixture to the dry ingredients, mixing briefly (10-15 seconds) until just moistened; avoid overmixing.

  5. Pour the lumpy batter into the prepared pan and bake immediately for 25 to 30 minutes, or until a toothpick inserted comes out clean.

  6. Cool the cornbread in the pan for 10 minutes, then remove and cool on a rack for 5 more minutes before serving.
