Easy Coconut Rice

Instructions

  1. Coat the bottom of a deep pot with oil.

  2. Combine rice, coconut milk, salt, and water in the pot. Bring to a boil over medium-high heat, stirring occasionally.

  3. Once boiling, reduce heat to low, cover the pot tightly, and simmer for 15 to 20 minutes until the liquid is absorbed.

  4. If liquid remains, steam a few minutes longer; otherwise, turn off the heat.

  5. Let the covered pot rest on the hot burner for 5 to 10 minutes.

  6. Fluff the rice with a fork and adjust salt to taste before serving.
