Easy Coconut Rice
A simple coconut rice, ideal for complementing various Thai and Indian meals.

Instructions

Coat the bottom of a deep pot with oil.

Combine rice, coconut milk, salt, and water in the pot. Bring to a boil over medium-high heat, stirring occasionally.

Once boiling, reduce heat to low, cover the pot tightly, and simmer for 15 to 20 minutes until the liquid is absorbed.

If liquid remains, steam a few minutes longer; otherwise, turn off the heat.

Let the covered pot rest on the hot burner for 5 to 10 minutes.

Fluff the rice with a fork and adjust salt to taste before serving.
