Easy Coconut Custard Pie

Instructions

  1. Preheat the oven to 350 F and prepare a 9- or 10-inch pie plate by buttering or spraying with nonstick spray, placing it on a rimmed baking sheet.

  2. In a mixing bowl, beat eggs with sugar until blended, then add flour and salt and beat until smooth.

  3. Beat in coconut, vanilla, and gradually the melted butter, then on low speed, beat in milk until blended.

  4. Pour the coconut mixture into the prepared pie plate and bake for 50 to 60 minutes, or until browned and set.

  5. Serve the pie at room temperature or cold, topped with whipped cream and toasted coconut if desired.
