Instructions

  1. Boil water.

  2. Dissolve sugar in the boiling water in a large container, then cool completely.

  3. Grate lemon zest (avoiding white pith) and slice lemons; add both, along with citric acid and flower heads, to the sugar water and stir well.

  4. Cover the mixture with a clean cloth and steep for 48 hours.

  5. Strain the liquid through a fine muslin cloth into a clean bowl.

  6. Using a funnel, fill sterilized glass bottles with the strained cordial.

  7. Serve over ice, garnished with lemon slices.
