Instructions

  1. Preheat the oven to 400 F (205 C) and grease a baking sheet with butter and flour.

  2. Sieve self-rising flour into a large bowl, then add butter, baking powder, and salt. Rub the butter into the flour until the mixture resembles fine breadcrumbs.

  3. Stir in 1/2 cup (55 g) of grated cheese and the dry mustard.

  4. Make a well in the center and gradually mix in enough milk with a knife to form a soft, pliable dough, adding flour if it becomes too sticky.

  5. Turn the dough onto a floured surface, knead lightly until smooth, then roll it to a 3/4-inch (2-cm) thickness.

  6. Cut the dough into 3-inch (7.5-cm) rounds or triangles.

  7. Place the scones on the prepared baking tray, brush with the beaten egg and milk mixture, then sprinkle with the remaining grated cheese.

  8. Bake on an upper rack for 15 minutes, or until golden brown and well risen.

  9. Cool on a wire rack before serving, ideally split and spread with butter.
