Easy Chocolate Mango Mousse

Instructions

Heat 1 cup of coconut milk in a pot over medium-high heat until steaming, reserving the remaining coconut milk.

Add chocolate pieces, egg, mangoes, cardamom, salt, and 2 tablespoons brown sugar to a blender.

Pour the hot coconut milk into the blender and blend on high for 45 to 60 seconds until well combined.

Add the reserved coconut milk, blend briefly, then taste and add up to 1/4 cup more sugar if desired, blending again.

Pour the mousse into bowls and chill in the refrigerator for at least 4 hours to firm.

Serve plain or with whipped cream and fresh mango pieces.
