Easy Chicken Stir-Fry

Instructions

  1. Combine chili oil, garlic, ginger, spring onions, soy sauce, and water for the stir-fry sauce.

  2. In a dry wok, toast cashews over medium heat for about 1 minute until lightly browned; remove.

  3. Heat peanut oil in the wok, then stir-fry chicken for 5-6 minutes until browned; remove.

  4. Stir-fry mushrooms, carrots, and water chestnuts for 3 minutes.

  5. Return chicken and cashews to the wok, add the prepared sauce; stir, cover, and cook for 3 minutes.

  6. Stir in the cornstarch and water mixture until the sauce thickens, then remove from heat.
