Instructions

  1. Heat oil in a large skillet over medium heat. Brown chicken on all sides for 10 minutes.

  2. Remove chicken and drain excess grease, leaving 1-2 tablespoons in the skillet.

  3. Sauté chopped onion, green pepper, and minced garlic in the skillet until onion softens.

  4. Stir in tomatoes, wine, oregano, salt, pepper, and a bay leaf.

  5. Return chicken to the sauce. Bring to a boil, then reduce heat, cover, and simmer for 45 minutes or until tender.

  6. Discard the bay leaf and serve with hot cooked pasta.
