Instructions

  1. Preheat the oven to 350 F.

  2. Spray a 9x13-inch baking pan.

  3. In a large bowl, combine cake mix, 1/2 cup softened unsalted butter, and 1 lightly beaten egg using an electric mixer until well combined and crumbs form. Press the crumb mixture firmly into the bottom of the prepared pan.

  4. In a separate large bowl, beat 8 ounces softened cream cheese until smooth. Gradually add 1 pound confectioners' sugar, then beat until light and fluffy.

  5. Beat in the remaining 3 eggs until very smooth, then mix in 1/2 teaspoon vanilla extract, if desired.

  6. Pour the cream cheese batter over the crumb layer, spreading it evenly.

  7. Bake for 35 to 40 minutes, or until set and golden brown.

  8. Cool completely on a rack, then cover and refrigerate until thoroughly chilled before slicing into squares.

  9. Store the bars refrigerated.
