Instructions

  1. Preheat the oven to 375 F (190 C) and prepare 12 muffin cups by greasing and flouring or lining them.

  2. In a medium bowl, combine salt, baking powder, 2 cups flour, sugar, and cinnamon.

  3. Toss cherries in 2 tablespoons flour.

  4. In a separate bowl, whisk egg, vanilla extract, milk, and melted butter.

  5. Stir the wet mixture into the dry until just moistened, then gently fold in the floured cherries.

  6. Fill muffin cups two-thirds full.

  7. Bake for 15 to 20 minutes until a toothpick comes out clean; cool for 10 to 15 minutes before serving.
