Instructions

  1. Bring 1/2 inch of water to a simmer in a pot fitted with a steaming basket.

  2. Place cauliflower florets in the basket, cover, and steam for 5 to 8 minutes until crisp-tender.

  3. Concurrently, melt butter in a saucepan over medium heat.

  4. Whisk in flour, ground mustard, and nutmeg; cook for 1 1/2 to 2 minutes.

  5. Gradually whisk in 3/4 cup milk and cook, stirring, until thickened.

  6. Stir in shredded cheese until melted. Thin with extra milk if desired, then season with salt and pepper.

  7. Serve cauliflower topped with the cheese sauce. Garnish with paprika and parsley if preferred.
