Easy Caribbean Island Lime Shrimp

Instructions

  1. Combine all marinade ingredients except 1 tablespoon olive oil and the shrimp in a zip-top bag and mix thoroughly.

  2. Add shrimp to the marinade bag, squeeze out air, seal, and turn to coat; refrigerate for 30-45 minutes, avoiding over-marination.

  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

  4. Remove shrimp from marinade, place in a single layer in the hot pan, reserving the marinade.

  5. Cook shrimp for 1 minute per side, then an additional 2-3 minutes until done, in batches if necessary; remove and keep warm.

  6. Add the reserved marinade to the hot pan and cook until it reduces to a thin sauce.

  7. Return shrimp to the pan and toss in the sauce to coat.
