Easy Caribbean Alcapurrias

Caribbean alcapurrias are savory fried fritters filled with seasoned ground beef, made from a masa of yautia and green banana.

Instructions

  1. Peel and wash green bananas and yautías.

  2. Place them in cold salted water, then grate or food process into a bowl; season with salt and mix well to form the masa.

  3. Brown ground beef in a pot, drain fat, then stir in sofrito, alcaparrado mix, salt, and pepper; cook for 5 minutes.

  4. Remove beef filling from heat and let cool.

  5. Spread 1-2 tablespoons of masa on wax paper, create a well, add 1-2 teaspoons of filling, and cover with more masa; smooth to enclose.

  6. Heat oil to 360 F in a deep fryer or pan.

  7. Carefully add alcapurrias to the hot oil, fry for 5-7 minutes until golden and crispy.

  8. Drain on paper towels and cool slightly before serving.
