Easy Caramel Flan

Instructions

  1. Preheat the oven to 325F and heat water for a water bath.

  2. Pour 1 cup of sugar into a warm pan over medium heat, stirring constantly until it caramelizes; avoid overcooking.

  3. Quickly pour 2-3 tablespoons of caramel into each of 12 ramekins, tilting to coat the bottoms; reheat caramel if it hardens.

  4. Whisk eggs, then mix in condensed milk and evaporated milk.

  5. Gradually add remaining 1/2 cup sugar, then vanilla, mixing until silky.

  6. Pour custard into prepared ramekins.

  7. Place ramekins in a large baking pan and add hot water to the pan, reaching about 2 inches up the sides of the ramekins.

  8. Cover the pan with foil and bake for 60-75 minutes. Flan is done when a knife inserted slightly off-center comes out clean.

  9. Carefully remove flans from the hot water bath, cool to room temperature, then refrigerate for at least one hour in their dishes.

  10. To serve, loosen edges with a knife and invert each flan onto a plate.
