Instructions
-
Preheat the oven to 325F and heat water for a water bath.
-
Pour 1 cup of sugar into a warm pan over medium heat, stirring constantly until it caramelizes; avoid overcooking.
-
Quickly pour 2-3 tablespoons of caramel into each of 12 ramekins, tilting to coat the bottoms; reheat caramel if it hardens.
-
Whisk eggs, then mix in condensed milk and evaporated milk.
-
Gradually add remaining 1/2 cup sugar, then vanilla, mixing until silky.
-
Pour custard into prepared ramekins.
-
Place ramekins in a large baking pan and add hot water to the pan, reaching about 2 inches up the sides of the ramekins.
-
Cover the pan with foil and bake for 60-75 minutes. Flan is done when a knife inserted slightly off-center comes out clean.
-
Carefully remove flans from the hot water bath, cool to room temperature, then refrigerate for at least one hour in their dishes.
-
To serve, loosen edges with a knife and invert each flan onto a plate.
