Instructions

  1. Trim leek roots and any dried greens, then halve lengthwise and slice crosswise into bite-sized pieces.

  2. Clean leeks by submerging them in a bowl of cool water, swishing, allowing dirt to settle, then lifting with a slotted spoon.

  3. Melt 1 tablespoon unsalted butter in a large frying pan over medium-high heat.

  4. Add the cleaned leeks and 1/2 teaspoon salt to the pan, stirring to combine.

  5. Cover the pan, reduce heat to medium-low, and cook for 30 to 40 minutes, stirring every 5 minutes, until very tender.

  6. Remove the pan from heat, add the remaining 1 tablespoon butter, and stir until melted before serving.
