Easy Broccoli and Cauliflower Frittata

Instructions

  1. Preheat the broiler.

  2. In a 12-inch nonstick ovenproof skillet, melt butter with olive oil over medium heat.

  3. Add onions, garlic, broccoli, and cauliflower; cook, stirring occasionally, until crisp-tender.

  4. Add 2 tablespoons water, cover, and steam for 2 minutes until vegetables are tender.

  5. Pour eggs over the vegetables, then sprinkle with thyme, salt, and pepper.

  6. Cook the frittata, lifting edges to allow uncooked egg to flow underneath, until the bottom is lightly browned and almost set.

  7. Transfer the skillet to the preheated broiler and cook for 4 to 8 minutes until the egg mixture is set; remove from oven.

  8. Sprinkle with both cheeses. Return to the broiler for 3 to 6 minutes, rotating occasionally, until the cheese is melted and browned.

  9. Cut into wedges and serve immediately.
