Instructions

  1. Preheat oven to 350 F (180 C) and butter an 8-inch-square baking dish.

  2. Cook sausage and onion in a large skillet, breaking up the sausage, then drain excess fat.

  3. Layer the hash browns, half of the shredded cheese, the cooked sausage and onion mixture, and the remaining cheese in the prepared baking dish.

  4. Whisk together eggs, milk, and pepper, then pour this mixture over the layered ingredients.

  5. Cover the dish with foil and bake for 45 to 55 minutes, or until a knife inserted near the center comes out clean.

  6. Let the casserole stand for 10 to 15 minutes before cutting into squares and serving, optionally with salsa.
