Instructions

  1. Season 4 (1 1/2-inch thick) bone-in, center cut pork chops with salt and pepper on both sides.

  2. Whisk together 1/2 cup chicken broth, 3 tablespoons brown sugar, 1 tablespoon Dijon mustard, 1 tablespoon apple cider vinegar, and 1 tablespoon Worcestershire sauce; set aside.

  3. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Sear pork until golden on both sides, about 6 minutes total, then remove to a plate.

  4. Reduce heat to medium. Sauté 1 cup diced onions in the skillet until softened and lightly browned. Add 2 minced garlic cloves and cook for 30 seconds until aromatic.

  5. Nestle the pork into the onion-garlic mixture in the skillet.

  6. Pour the whisked broth mixture over the pork. Reduce heat to low, cover tightly, and cook until pork chops are tender, 45 to 60 minutes.
