Instructions
-
Season 4 (1 1/2-inch thick) bone-in, center cut pork chops with salt and pepper on both sides.
-
Whisk together 1/2 cup chicken broth, 3 tablespoons brown sugar, 1 tablespoon Dijon mustard, 1 tablespoon apple cider vinegar, and 1 tablespoon Worcestershire sauce; set aside.
-
Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Sear pork until golden on both sides, about 6 minutes total, then remove to a plate.
-
Reduce heat to medium. Sauté 1 cup diced onions in the skillet until softened and lightly browned. Add 2 minced garlic cloves and cook for 30 seconds until aromatic.
-
Nestle the pork into the onion-garlic mixture in the skillet.
-
Pour the whisked broth mixture over the pork. Reduce heat to low, cover tightly, and cook until pork chops are tender, 45 to 60 minutes.
