Instructions

  1. Start boiling salted water for pasta; cook according to package directions, reserving 1/2 cup pasta water before draining.

  2. Return drained pasta to the pot, set heat to low, and stir in butter until coated.

  3. Gradually stir in blue cheese and reserved pasta water as needed until the cheese melts into a sauce.

  4. Stir in parsley and salt to taste; serve immediately.
