Instructions

  1. Preheat the oven to 425 F and drain peaches, reserving the liquid.

  2. In a saucepan, combine sugar, cornstarch, and reserved peach liquid; bring to a boil over medium heat, stirring constantly for one minute, then remove from heat.

  3. Stir lemon juice and peaches into the mixture, then set aside to cool.

  4. For the dough, mix flour, salt, and baking powder in a bowl.

  5. Cut shortening into the dry ingredients.

  6. Gradually add milk to form a soft dough.

  7. Roll the dough on a floured surface to fit your baking dish.

  8. Spoon peach mixture into a buttered baking dish, dot with butter pieces, and sprinkle with cinnamon sugar.

  9. Place the rolled dough over the peach filling and crimp edges.

  10. Bake 16-20 minutes until golden, then cool for 15-20 minutes before serving.
