Easy Beef Stroganoff

An easy beef stroganoff can be quickly prepared using leftover cooked roast beef, pot roast, or brisket.

Instructions

  1. Start boiling water for egg noodles.

  2. Melt butter in a large skillet over medium heat, then sauté onions and mushrooms until softened.

  3. Sprinkle flour over the vegetables and stir until coated.

  4. Gradually add broth, stirring continuously until the mixture thickens.

  5. Stir in cream of mushroom soup, sour cream, salt, and pepper.

  6. Add the cooked beef and heat through for several minutes.

  7. Serve the stroganoff over hot cooked egg noodles, optionally garnishing with chopped parsley.
