Easy Baked Beef Hash With Potatoes
A hearty baked beef hash features diced potatoes and vegetables mixed with leftover pot roast, roast beef, or corned beef, seasoned and baked until tender.

Preheat the oven to 375 F and grease a 2 to 2 1/2-quart baking dish or heavy oven-safe skillet.

Dice potatoes into 1/4-inch pieces, finely chop onions and celery, and finely chop a seeded bell pepper.

Combine diced potatoes, chopped vegetables, chopped beef, dry mustard, salt, garlic powder, thyme, and 1 cup of beef broth (or leftover gravy with enough stock to measure 1 cup) in a bowl. Mix thoroughly.

Pack the mixture into the prepared baking dish.

Cover with foil and bake for 45 to 55 minutes, or until the potatoes are tender.

Uncover the baking dish and brown the hash under the broiler.
