Easy Asparagus Soup

Instructions

  1. Cut asparagus into 1-inch pieces, reserving some tips for garnish if desired.

  2. Melt butter in a soup pot over medium heat, then add garlic and cook for 30 seconds.

  3. Stir in stock and asparagus; simmer for 5 minutes until asparagus is tender.

  4. Remove from heat and blend the mixture until smooth using an immersion or regular blender.

  5. Return soup to the pot if using a regular blender. Stir in cream and heat on low, then season with salt and cayenne pepper.

  6. Blanch reserved asparagus tips for garnish.

  7. Ladle soup into bowls and garnish with blanched asparagus tips, if desired.
