Easy and Elegant Baked Stuffed Lobster

Instructions

  1. Preheat the oven to 400°F.

  2. Kill the lobster by plunging a knife behind its eyes or by freezing it for 30 to 60 minutes.

  3. Flip the lobster, then cut its body cavity open down to the end of the tail without cutting through.

  4. Remove and reserve the tomalley; discard the stomach and intestines, then rinse the lobster cavity.

  5. In a mixing bowl, combine the cracker crumbs, melted butter, celery, onion, 1 tablespoon Parmesan cheese, garlic powder, lemon pepper, and salt.

  6. Add the reserved tomalley to the mixture and stir.

  7. Pack the cracker mixture into the lobster's body cavity.

  8. Sprinkle with the remaining Parmesan cheese and dust lightly with paprika.

  9. Bake the stuffed lobster in an uncovered 2-inch-deep baking pan for 30 minutes.

  10. If desired, broil for an additional 2 minutes to brown the stuffing.

  11. Serve immediately, optionally with melted butter.
