Instructions

  1. Preheat the oven to 3500F and generously grease a 12-cup muffin tin.

  2. Press 2-3 Tater Tots or an equal amount of hash browns into the bottom of each muffin well.

  3. Whisk together eggs, milk, salt, and pepper, then pour this mixture over the potatoes in each well until fully covered.

  4. Evenly top each omelet cup with thawed, drained spinach and shredded cheddar.

  5. Bake for 15 to 20 minutes, or until the tops are golden brown and the eggs are cooked through.

  6. Allow the omelet bites to cool slightly before separating them from the muffin tin with a knife; serve as desired.
