Eastern European Kolacky

Flaky Eastern European pastries, known as kolacky, are made with a cream cheese and butter dough, then topped with jam.

Instructions

  1. Beat butter, cream cheese, milk, and sugar until fluffy, then beat in the egg yolk.

  2. Whisk flour and baking powder, then stir into the butter mixture to form a stiff dough. Cover and refrigerate for several hours or overnight.

  3. Preheat the oven to 400 F.

  4. Roll dough to 1/4-inch thickness between parchment paper; cut with a 2-inch cookie cutter.

  5. Arrange pastries 1 inch apart on ungreased baking sheets. Press an indentation into the center of each, then spoon 1 teaspoon of filling into each. Repeat with remaining dough.

  6. Bake 10-12 minutes until lightly browned.

  7. Cool completely on wire racks.

  8. Store in an airtight container and sprinkle with confectioners' sugar before serving.
