Instructions

  1. Preheat oven to 200 F (95 C) to keep pancakes warm.

  2. Heat a griddle or pan over medium heat, then reduce heat.

  3. Combine egg, milk, and cooled melted butter (and vanilla, if using).

  4. Whisk flour, baking powder, sugar, and salt in a large bowl.

  5. Stir wet ingredients into dry until just combined; do not overmix.

  6. Let batter rest for 5 minutes, adjusting consistency with milk or flour if needed.

  7. Butter the griddle. Form bunny shapes by spooning 1/8 cup batter for the head, then adding batter for two ears, one larger body circle, and two smaller foot circles. Cook pancakes for a few minutes per side; repeat for four bunnies, holding cooked pancakes warm in the oven.

  8. Assemble each bunny on a plate: place ears at the top, layer the head (medium circle) below them, then the body (large circle) below the head, and two feet (small circles) at the bottom.

  9. Add a banana round and three chocolate chips to each foot for pads.

  10. Place half a marshmallow on the body and shredded coconut on the marshmallow and between the ears.

  11. Serve with desired toppings.
