Instructions

  1. Preheat the oven and start boiling the water as specified by the scalloped potato mix package directions.

  2. In a 3-quart casserole, combine dehydrated potatoes, sauce mix, and the butter amount indicated on the package.

  3. Pour in the specified amount of boiling water for two packages, add heavy cream (instead of milk), and stir thoroughly.

  4. Bake according to package instructions; 10 minutes before completion, sprinkle with Parmesan cheese.

  5. Return to the oven and continue baking until potatoes are tender, the top is golden brown, and the sauce is bubbling.

  6. Cool for 5 minutes, then serve.
