Instructions

  1. Preheat the oven to 375 F.

  2. Let refrigerated pie crust stand at room temperature for 15 minutes, then unroll and place into a 9-inch pie pan, pressing into the bottom and up the sides and fluting the edges.

  3. Sprinkle 3 cups shredded cheddar cheese evenly into the bottom of the pie crust.

  4. In a medium bowl, combine 4 large eggs, 1 cup milk, 1/2 cup heavy cream, 3 tablespoons all-purpose flour, 1 to 2 teaspoons dried chives, 1/4 teaspoon kosher salt, and 1/8 teaspoon pepper; whisk until smooth.

  5. Carefully pour the custard mixture over the cheese in the crust.

  6. Bake for 40 to 50 minutes until puffed, golden brown, and set, then let stand for 5 minutes before cutting into wedges and serving.
