Dutch Satay Sauce

Instructions

  1. Fry onion in oil over medium heat until softened and lightly browned.

  2. Stir in peanut butter, ground candlenuts, ginger, and garlic.

  3. Bruise lemongrass, then add it along with kecap manis, coconut milk, and lime leaves; simmer for 10 minutes.

  4. Incorporate sambal and adjust seasoning with additional sambal for spice or kecap manis for saltiness.

  5. If the sauce is too thick, thin with warm water, then discard lemongrass and lime leaves before whisking and serving.
