Dutch Apple Beignets (Appelflappen)

Instructions

Heat oil in a deep pan or fryer to 350 F/180 C.

Dissolve 1 teaspoon sugar in 1/2 cup lukewarm water, then sprinkle yeast and let activate for 10 minutes.

In a large bowl, combine flour and sugar; add eggs and activated yeast mixture to a well in the center.

Gradually incorporate lukewarm milk into the flour mixture, whisking until smooth.

Cover the dough and let it rise in a warm place for about 1 hour until doubled, then stir in salt.

Peel, core, and slice apples into thick rounds.

Dip apple slices into the dough, shaking off excess, then carefully drop into the hot oil.

Fry fritters until golden brown on both sides, flipping once, then drain on paper towels.

Sieve confectioners' sugar and ground cinnamon over warm fritters before serving.
