Instructions

  1. Scoop the deseeded durian flesh into an electric mixer and process until a smooth paste forms.

  2. Press the durian paste through a fine sieve, then chill.

  3. In a medium bowl, whisk the egg yolks with vanilla essence and sugar.

  4. Heat the milk and cream over medium heat until it nearly boils, then reduce to low.

  5. Slowly pour the egg mixture into the hot milk, stirring constantly until the custard thickens; do not let it boil.

  6. Remove the thickened custard from heat, cool, and then chill in the freezer for 30 to 45 minutes until it begins to harden.

  7. Gradually stir the chilled durian paste, one tablespoon at a time, into the custard until fully incorporated.

  8. Freeze the mixture in an ice cream maker or continue freezing, stirring several times, until firm.
