On a parchment-lined baking sheet, roast sesame seeds for 2-3 minutes until toasted, then cool.

Next, roast chickpeas and hazelnuts on the same sheet for 5 minutes.

Combine the toasted sesame seeds, chickpeas, and hazelnuts with coriander seeds, cumin seeds, salt, and black peppercorns.

Grind this mixture in a food processor or with a mortar and pestle for 2-4 minutes.
