Instructions
-
Start boiling a large pot of water.
-
Peel and cut potatoes into 1/2-inch wide fries, then rinse under cold water until clear.
-
Once water boils, add fries and cook for 4 minutes. Drain, thoroughly dry on a towel, and let cool completely.
-
Melt duck fat in a large pot and heat to 375 F.
-
Prepare a paper towel-lined roasting tin and a slotted spoon.
-
Add fries in a single layer to the hot fat, maintaining 375 F. Cook 4-5 minutes, stirring occasionally, until lightly browned.
-
Remove with a slotted spoon and drain on paper towels.
-
Reheat fat and repeat with remaining fries until all are partially cooked. These can be refrigerated, covered, until ready to serve.
-
To serve, reheat fat. Fry partially cooked fries until golden and crisp, then drain on fresh paper towels. Keep warm in the oven while frying remaining batches.
-
Season with salt and serve immediately.
