Duck Fat Fries Recipe

Crispy, golden duck fat fries are easily prepared at home for a superior alternative to store-bought frozen options.

Instructions

  1. Start boiling a large pot of water.

  2. Peel and cut potatoes into 1/2-inch wide fries, then rinse under cold water until clear.

  3. Once water boils, add fries and cook for 4 minutes. Drain, thoroughly dry on a towel, and let cool completely.

  4. Melt duck fat in a large pot and heat to 375 F.

  5. Prepare a paper towel-lined roasting tin and a slotted spoon.

  6. Add fries in a single layer to the hot fat, maintaining 375 F. Cook 4-5 minutes, stirring occasionally, until lightly browned.

  7. Remove with a slotted spoon and drain on paper towels.

  8. Reheat fat and repeat with remaining fries until all are partially cooked. These can be refrigerated, covered, until ready to serve.

  9. To serve, reheat fat. Fry partially cooked fries until golden and crisp, then drain on fresh paper towels. Keep warm in the oven while frying remaining batches.

  10. Season with salt and serve immediately.
