Duck Fat Biscuits

Instructions

  1. Preheat oven to 425 F and line a baking sheet with parchment paper.

  2. Combine flour, baking powder, baking soda, and salt in a bowl.

  3. Cut chilled duck fat into the flour mixture until crumbly.

  4. Stir in buttermilk until just moistened.

  5. Turn dough onto a floured surface and knead 2-4 times.

  6. Pat dough into a 3/4-inch thick circle.

  7. Cut biscuits and place on the prepared baking sheet; gather scraps to cut additional biscuits.

  8. Bake for 12-15 minutes until golden brown.
