Dublin Coddle

A comforting traditional Irish Dublin coddle features pork sausage, bacon, potatoes, and carrots slowly braised, ideal for cool weather.

Instructions

  1. Preheat oven to 425 F.

  2. Heat oil in a large skillet over medium heat, cook onions until translucent for 4 minutes.

  3. Add bacon and sausages, increase heat to medium-high, and cook, stirring, until golden for 8 to 10 minutes; remove from heat.

  4. Layer the sausage mixture, sliced carrots, and potatoes in a Dutch oven, seasoning each layer with salt and pepper.

  5. Pour stock over the layers, then cover and bake for 45 minutes.

  6. Reduce oven heat to 350 F, then continue baking for 30 minutes or until bubbling and potatoes are tender, adding boiling water if the stew appears dry.

  7. Remove from oven, rest for 10 minutes, and adjust seasoning as needed.
