Trim only the colored part of the citrus skin using a knife or peeler, ensuring all bitter white pith is removed.

Choose a drying method: 1) Lay the peels inside-up on a plate and air dry in a warm, sunny, well-ventilated spot for 2-3 days until crisp. 2) Preheat oven to 200 F, spread peels on a parchment-lined baking sheet, and bake for 25-30 minutes until stiff, turning off the oven or rotating the pan if browning occurs.
