Instructions

  1. Halve the dragon fruit and scoop out all of its flesh.

  2. Place dragon fruit flesh and all other ingredients into a blender; blitz on high speed for 20 to 30 seconds.

  3. Taste and adjust for desired strength by adding more vodka or coconut milk, and for sweetness by adding more sugar or lime juice.

  4. Pour into chilled martini glasses and garnish with a dragon fruit slice, lime wheel, or lime zest if desired.
