Dr Pepper Chocolate Cake

Instructions

Preheat the oven to 350 F. Grease and flour two 9-inch round cake pans.

Sift flour, sugar, brown sugar, cocoa, and baking soda into a bowl; set aside.

In a saucepan, combine Dr Pepper and chocolate chips. Heat on low, stirring until chips melt, then remove from heat.

In a mixer, combine eggs, buttermilk, oil, and vanilla; mix on medium for 2 minutes.

While mixing, slowly add the Dr Pepper-chocolate mixture and beat for 1 minute.

Gradually add the dry ingredients on low speed, then increase to medium and beat for 2 minutes.

Divide the batter evenly between the prepared pans.

Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Cool cake layers in pans for 10 minutes, then invert onto a cooling rack to cool completely.

For the frosting, beat shortening and butter until fluffy.

Add confectioners' sugar and cocoa; mix until combined.

Stir Dr Pepper and vanilla, then slowly beat into the frosting on high speed until light and fluffy for 1 minute.

Place one cake layer top-down on a plate, spread with 1 cup of frosting, then top with the second layer and spread remaining frosting on top and sides.
