Double-Chocolate Chip Muffins

Instructions

  1. Preheat oven to 350 F.

  2. In a large bowl, combine flour, cocoa powder, sugar, baking powder, and salt.

  3. In a medium bowl, combine milk, melted butter, oil, beaten eggs, and vanilla extract.

  4. Prepare a muffin pan by greasing or using liners.

  5. Add wet ingredients to dry; mix for under 10 seconds until batter is lumpy, avoiding overmixing.

  6. Gently fold 1 cup of chocolate chips into the batter.

  7. Spoon batter into the prepared muffin pan.

  8. Sprinkle remaining chocolate chips on top, then bake immediately for 18-20 minutes until a toothpick comes out clean.

  9. Cool muffins in the pan for 5 minutes, then move to a wire rack for an additional 5 minutes.
