Instructions

  1. Whisk eggs and sugar thoroughly in a bowl.

  2. Dissolve baking soda in water, then add to the egg mixture.

  3. Gradually incorporate sifted flour into the egg mixture to form a smooth batter.

  4. Heat and lightly oil a skillet or hot plate.

  5. Pour scoops of batter to form 3 to 4 inch pancakes, flipping when bubbles appear on the surface.

  6. Cook remaining batter, then cool the pancakes completely.

  7. Pair pancakes and fill each with a scoop of anko sweet beans.
