Dominosteine (German Layered Christmas Cookie) Recipe

Homemade Dominosteine are a traditional German Christmas cookie featuring layers of gingerbread, marzipan, and chocolate coating.

Instructions

  1. Preheat the oven to 350 F (175 C).

  2. Heat honey, sugar, and butter in a saucepan, stirring until sugar dissolves, then cool to lukewarm.

  3. Combine egg yolk, water, and baker's ammonia, then mix into the lukewarm honey mixture.

  4. Stir in flour, ground almonds, potash, and spice mix to form a stiff dough.

  5. Pat the dough into a 7x7-inch square, 1/4 to 1/2-inch thick, on parchment paper, then straighten the edges.

  6. Bake for about 25 minutes until set but not browned.

  7. Cool the baked layer, then horizontally slice it in half with a serrated knife.

  8. Combine almond paste and powdered sugar, cutting together, then add rum or water to form a smooth paste.

  9. Roll the marzipan paste between wax paper, using powdered sugar if needed, to fit the baked lebkuchen layer.

  10. Place one lebkuchen layer, brush with half the jam, then add the marzipan layer. Brush the remaining jam onto the second lebkuchen layer's underside, then press it firmly on top to form a sandwich.

  11. Cut the layered sandwich into one-inch squares using a serrated knife.

  12. Melt chocolate coating according to package directions, thinning with shortening if necessary.

  13. Dip each square completely in the melted chocolate.

  14. Place on waxed paper to dry.
