Dominican Fried Chicken (Chicharrones de Pollo)

A Dominican-style fried chicken is marinated in lime and garlic, then coated in seasoned flour and fried until crispy.

Instructions

  1. Combine lime juice, soy sauce, Worcestershire sauce, and minced garlic in a bowl or bag.

  2. Add chicken strips to the mixture and marinate for 30 minutes to 3 hours.

  3. In a separate bowl, thoroughly mix flour, paprika, pepper, and salt.

  4. Remove chicken from marinade, pat dry, and discard the marinade.

  5. Coat each chicken piece well with the seasoned flour mixture.

  6. Heat vegetable oil in a deep pan or fryer to 360 F (182 C).

  7. Fry chicken in batches for about 2 minutes per side until golden brown and fully cooked (165 F / 74 C internal temperature).

  8. Drain fried chicken on paper towels and keep warm until serving.
